The happy hokkaido is a pumpkin from Boer Henk, Bijzonder brabants. A big ‘moestuin’ near Eindhoven. It has been slow-cooked with our nutritious vegan broth and chef’s spices. Other ingredients from his farm are your kale salad and lupine. We sprout our lupin, which makes it easier to digest and is filled with nutrients and vitamins. Our sauerkraut is biodynamic and great for gut health. Same as your linseed-crackers. In our own phood farm we grow your salad, sage and cavolo nero on water with fish (this is called aquaponic farming) in our basement with special grow lights. We love this happy hokkaido dish because it’s so pure, in season and all ingredients combined give your immune system a real boost. When eating more liquids like broths & soups, food becomes easier to digest, and takes less energy for your body to consume, so you have lots of extra energy left for doing all the things you love.
